Guerzoni Biodynamic SABA Grape Syrup 17 oz. The Guerzoni family of Modena has preserved the ancient craft of Mosto Cotto, or cooked grape juice. "SABA" is produced by slowly cooking the juice of selected Biodynamic grapes (Salamino, Fortana, Trebbiano Bianco, and Lancellotta) until it attains a syrupy texture. Years ago in Italy sugar was an expensive luxury, but grapes were plentiful. Saba was used instead of sugar. In the south of Italy Saba is called "vin cotto". In her book, "The Italian Country Table," Lynn Rosetto Kaspar quotes a Sicilian woman as saying, Sugar sweetens, vin cotto flavors. This traditional specialty is used in many ways, limited only by your culinary imagination: As a drink when diluted with water (sparkling water is delicious!), over shaved ice (granita), over ice cream, to sweeten breads and cookies, as a condiment on beans or polenta, or added to ricotta or yogurt.
